I'd love to see you do a podcast on one of your baking extravaganzas. So what are the differences in taste and texture between a boiled and baked bagel?

I'm not sure I'm ready for podcasting, but who knows!! With bagels, they're all boiled ahead of baking; that's the unique part of production that gives them a chewy texture. But the length of time that you boil them affects the chewiness. Then they're baked immediately after.
